These Gluten Free Coconut Lime cupcakes (VEGAN) were the highlight of my summer creations last year and I couldn’t help but recreate them once the weather started warming up! I’m not sure why I didn’t post the recipe last year but here it is! Over due! Enjoy these Gluten Free and Vegan gems and stay sweet and skinny!

GF/V COCONUT LIME CUPCAKES

1 cup of coconut milk
1 tsp of apple cider vinegar
(Combine both and set aside while mixing the rest of the recipe)
1 1/4 cup GF flour
2 tbsp cornstarch
3/4 cup sugar
1/2 tsp baking powder
3/4 tsp baking soda
A pinch of salt
1/3 cup coconut oil
1 tsp vanilla
Juice of 4 limes

Add all ingredients in your mixer and then add your vinegar curdled coconut milk in last. Fill your cupcake tin about 3/4 of the way as these do not rise as much as typical cupcakes. Bake for approx 10 mins, while continuously checking on them! Enjoy!

For the icing, I simply used the vegan buttercream recipe and mixed in some unsweetened coconut as well as used the coconut to garnish the top! 😉

veggiesThe weather is gorgeous! The flowers are FINALLY blooming and it’s time to take your body from winter time sweaters and jackets to flowing spring dresses and soon to be shorts! I love celebrating the changing of the seasons with a nice juice detox to ease my body on to the lighter, healthier foods that we crave when the weather gets warmer. And, of course, to clean out my system of any junk I may have eaten in the past months of winter. This week I am embarking on a five day juice detox! I’m going to be experimenting with new juice combinations as well as old favorites to compile a book for you with the ultimate in delicious juice detox recipes! I will be video logging every evening to let you know how it’s going, how I feel, etc. Please come and join me on this journey! It’s late, I’m tired but I’m still hungry and I hate going to bed with my tummy grumbling! Can you relate? I bet you can. Late night snacking can be a real diet enemy! You’re good all day, eating healthy, delicious meals and then midnight rolls around and you’re still working or just out with your friends, hunger strikes and you’re just too tired to make a good, healthy choice! Eating junk late at night is not only sabotaging your healthy daytime diet but it can leave you feeling gross and bloated when you wake up the next morning! Here’s a little tip video I put together for you guys so that you can be prepared for those late night cravings, keep these snacks on hand and you can go to sleep with a happy tummy and wake up being really glad you didn’t ruin your diet!

After my morning workout today I was really craving something cold and fruity! So I decided why not use some of the great products I sampled last night at NYC’s food fete and whip up something yummy! Combining So Delicious’s chocolate coconut milk and Manitoba Harvest’s hemp protein powder for a protein packed, craving satisfying, sweet breakfast treat! And the best part is that it takes only minutes to make!

Chocolate Raspberry Protein Shake

4 tbsp of Manitoba Harvest hemp powder
1 cup So Delicious chocolate coconut milk
1 cup frozen raspberries
Half a tray of ice cubes

Blend and enjoy! You can add bananas, strawberries or whatever you’d like as long as your base is the hemp protein and coconut milk, you’ll still get a wonderful animal product free dose of protein!
