Taco Salad with Chili-Lime Ranch Dressing + Kundalini Meditation

The more of us that are at peace in our individual lives, the more peaceful people in the world and the less hatred and violence will exist. Your power when handling any situation comes from your inner peace, so I’m excited to provide you with this short and simple meditation to bring you back home in moments of frustration. One of the areas where I needed peace was in the kitchen, so I started small, making easy and accessible meals, and then slowly built up my kitchen mojo and got a little more creative.”

“PEACE BEGINS WITH ME” KUNDALINI MEDITATION

You can do this meditation sitting in easy pose or while you are standing in the checkout line at the grocery store—whenever and wherever you need
to remind yourself that peace begins with you! Close your eyes, if possible, then gently press your thumb against your index finger, followed by your middle finger, ring finger, and pinkie, repeating the mantra “Peace. Begins. With. Me.”

Touch your index finger and say, “Peace.”
Touch your middle finger and say, “Begins.”
Touch your ring finger and say, “With.”
Touch your pinkie and say, “Me.”

Breathe deeply as you say each word, and go at your own pace. Repeat this as long as needed to bring you back to a centered, peaceful mind. I find that it works wonders in just a minute or two.

Ingredients

1⁄4 cup (41 g) pre-cooked chickpeas, drained and rinsed
1⁄2 cup (51 g) walnuts
2 tablespoons (30 ml) extra-virgin olive oil
1 teaspoon flaxseed meal
1⁄2 teaspoon ground cumin
1⁄2 teaspoon ground coriander
1⁄2 teaspoon paprika
1⁄2 teaspoon chili powder
1⁄2 teaspoon garlic powder
1⁄2 teaspoon onion powder
Salt and freshly ground black pepper, to taste
1⁄2 tomato, chopped
1⁄2 white onion, diced
1⁄4 cup (4 g) chopped cilantro
1 jalapeño, chopped and divided
4 romaine lettuce leaves, chopped
1⁄2 cup (97 g) precooked black beans, drained and rinsed
1 avocado, halved, pitted, and sliced

Chili-Lime Ranch Dressing

1⁄4 cup (60 g) tofu sour cream
Juice from 1⁄4 lime
Pinch of onion powder
Pinch of parsley
Pinch of garlic powder
Pinch of chili powder
1⁄2 teaspoon plain unsweetened almond milk

Method

  1. In a food processor, combine the chickpeas, walnuts, olive oil, flaxseed meal, cumin, coriander, paprika, chili powder, garlic powder, and onion powder. Generously season with salt and pepper and pulse until the mixture has the consistency of chopped “meat.” Set aside.
  2. In a small bowl, combine the tomatoes, onion, cilantro, and a teaspoon of jalapeño and toss together.
  3. Place the chopped romaine lettuce into 2 individual serving bowls. To each bowl, add a spoonful black beans, 2 spoonfuls of
    tomato mixture, a spoonful of the chopped “meat,” and sliced avocado.
  4. To make the chili-lime ranch dressing, combine all the ingredients in a bowl, mix together, and drizzle over salad.
