After my morning workout today I was really craving something cold and fruity! So I decided why not use some of the great products I sampled last night at NYC’s food fete and whip up something yummy! Combining So Delicious’s chocolate coconut milk and Manitoba Harvest’s hemp protein powder for a protein packed, craving satisfying, sweet breakfast treat! And the best part is that it takes only minutes to make!

Chocolate Raspberry Protein Shake

4 tbsp of Manitoba Harvest hemp powder
1 cup So Delicious chocolate coconut milk
1 cup frozen raspberries
Half a tray of ice cubes

Blend and enjoy! You can add bananas, strawberries or whatever you’d like as long as your base is the hemp protein and coconut milk, you’ll still get a wonderful animal product free dose of protein!

Have you been tossing around the idea of going meatless this Monday?! Even if you haven’t till you read this post, I hope now you are. I understand the overwhelmingness of giving up meat for a lifetime or maybe even a couple months but how about for just one day a week? I’ve already written a post about why this is a fabulous idea and all the benefits you’ll reap from just one day off meat, so if you haven’t read that, check it out here.

Alright, so now you know why going meatless one day is a great start (or you skipped the article and are taking my word for it)! The great thing about going vegetarian for one day a week is that it allows you to experiment with all sorts of different food choices you might normally pass over for some chicken or steak! However, I often find my carnivorous friends struggling to eat anything more than carbs when they first try this out and that’s no bueno! So to make your meatless Mondays even easier, every Monday I’ll be posting a meat free meal plan full of easy practical options for you to indulge in and start your week off right! Of course you needn’t follow it exactly if you have some yummy meat free ideas of your own add them in! And please comment below and let me know some great things you’ve been eating!

Meatless Monday Meal Plan #1

Breakfast:
Oatmeal with almond milk, fresh berries and sprinkled with chia seeds
OR
Fresh green juice (if your one of hose people who aren’t very hungry in the morning)

Lunch:
A nice big bowl of lentil soup
OR
A make-it-yourself salad (but what about protein?! Lentils, kidney beans, black beans, quinoa, edamame or grilled tofu are all great protein packed salad add ons!)

Dinner:
Feeling decadent? Try my skinny eggplant parmigiana recipe
OR
Quinoa with sautéed spinach, onions, asparagus, zucchini, whatever veggies your heart desires..

Snacks:
Almond butter with sliced apples
Carrots or broccoli with hummus
Kale chips

Yay!! Your going to make it through this meatless Monday and maybe even find you enjoy some of these meat free options more than you’d ever imagine!

strawberry chia seed pancake

These quick and easy to make strawberry chia seed protein pancakes are delicious! I literally ate four before stopping to take a picture for you guys! Loaded with good for you chia seeds and sweet strawberries, I can’t think of a sweeter and skinnier way to start your day! These protein packed pancakes are delicious for breakfast, lunch, dinner or even a great low fat snack to help fight that late afternoon hunger. Low fat, low cal and easy to make. Your diet’s already saying thank you!!

STRAWBERRY CHIA PANCAKES

4 or 5 chopped strawberries
1 egg
1 1/2 tbsp of fat free plain greek yogurt
1 heaping tbsp of chia seeds
a dash of agave nectar (optional)
4 tbsp of oat bran

Mix all the ingredients together, adding your strawberries last and then proceed as you would with a normal pancake! Spray some pam or cooking spray into your frying pan and pour some of the batter in and flip when ready. Super easy! Super sweet! These little pancakes taste so good you don’t even need any syrup or butter! FYI, this recipe is for an individual portion so multiply as necessary when eating with others. 🙂

One of the best things about this past week’s detox was learning to incorporate new ingredients in my everyday meals and actually quite enjoying them!! To make my special “Detox Oats and Blueberries” I added a tsp of chia seeds in to the normal oatmeal recipe to spice things up and pump up all the heath benefits. We all know oatmeal is already high in fiber and low in fat and calories making it a diet super star but with a little sprinkle of cinnamon and a dash of chia seeds this simple staple is unstoppable. First, cinnamon is great at curbing sugar cravings (I love adding it to my soy lattes!) plus it tastes pretty good to boot! Then the tsp of chia seeds comes in and provides essential fatty acids that you need to keep your energy up all day. This was especially important during the detox to keep my energy up but hey, I know you have a killer day ahead too so I’m sure you could use that first class energy! Did I mention that chia seeds don’t even taste like anything?! There a little pricey but you only need a sprinkle a day and chia seeds are the richest source of essential fatty acids from plant protein, so vegetarians and vegans especially, go nuts! Here’s my rendition on oats but have fun, use your favorite fruit (or whatever you have in the kitchen) and make it your own!

DETOX OATS AND BLUEBERRIES

1/4 cup quick oats
1/2 cup water
2 tbsp of coconut almond milk (or any non dairy milk)
a bunch of blueberries (i used the whole baby package!)
1/2 tsp of cinnamon
1 tsp of chia seeds

Pretty simple. Boil your oats in water as per normal oatmeal, then once it’s at the right consistency lower your burner to simmer and add your almond milk, blueberries, cinnamon and chia seeds! voila! Healthy, energy packed and low fat breakfast for you!

Tis the season to indulge in a little comfort food, eh? Well one of my favorite splurges is an amazing penne a la vodka with shrimp from an italian restaurant by my apartment and this past sunday I decided to let myself have it! Now, in order to prevent myself from a mega carb binge, I also ordered a salad and made sure to eat a bit of that first so I wasn’t ravenous once I got to my pasta. Secondly, the size of the pasta dinner (as it is at most italian restaurants) was actually enough to feed me all week for dinner, so I had a average bowl sized amount and took the rest home. And now comes the good part- I recycled my penne a la vodka in to a delicious frittata that I’ll be able to eat all week long guilt-free because I loaded it up with protein and veggies!

PENNE ALA VODKA FRITTATA

The amount of eggs you use will depend on how large your pyrex dish is (mine took 8 eggs) but scramble enough eggs to fill your dish at least an inch or so and then add 3 tbsp of fat free greek yogurt and continue to scramble the mixture together.

Meanwhile, throw some baby spinach (three large handfuls), olive oil and garlic into a frying a pan on the stove and sauté that for a couple minutes. Pour the spinach and left over pasta in the pan and spread it out evenly. Now pour your eggs on top and feel free mix it up in the dish so that the eggs are mixed through out. Sprinkle a little reduced fat cheese on top (if you please) and stick that in the oven on 425 degrees for a about 20 minutes or till you see the top getting golden brown!

Enjoy! You can cut it into individual portions and eat it for breakfast all week! 🙂

Sorry all my vegan loves, this recipe is pretty fantastic but has way too many animal products to substitute them all. However, it is a great way to get all the health benefits of quinoa in a surprisingly decadent treat! These pancakes are definitely sweet and surely made for the skinny. Please enjoy and let me know if you can find a comparable vegan breakfast!

BOOM BOOM BANANA PANCAKES

1/2 cup cooked quinoa
2 egg whites
1/4 cup of 1 percent milk ( or vanilla soy/coconut /almond milk)
1 tsp of brown sugar
1/4 tsp of vanilla
1/4 of a sliced banana

Whisk all of the above ingredients together in to one delicious batter. Place a sprayed skillet on your stove top and pour out the batter to make three pancakes. Flip em like you normally would till golden brown. Top it off with some more sliced bananas, a sprinkle of chopped walnuts and a drizzle of maple syrup! Mmmmm 🙂

You know those mornings when you wake up just ravenous for some sweet carby treat?! It usually happens to me on the weekends or during that lovely time of the month. Well this is perhaps an unusual but totally satisfying breakfast idea for you to give a spin!

Sweet Potato with Almond Butter and Maple Syrup

Poke a medium sweet potato with a fork 3 times; microwave on high until cooked, 3 to 5 minutes. Cut the potato in half lengthwise and mash up the insides a bit. In a seperate bowl, mix 2 tbsp of almond butter and tsp maple syrup and drizzle it over the potato! There you have it, quick and easy and loaded with good for you foods!

In the six months I spent living in Brooklyn, I developed quite a pizza tooth, I’d guess you’d call it. I had never particularly cared for pizza till I lived in Bensonhurst and started ordering from the famous pizza joint from Saturday Night Fever.I couldn’t help it, I was a gone. My all tim favorite pizza they had was a vodka sauce pizza covered in mozzarella. Oh, just writing about it is torturous!

Anyways, so normally I’d say’ “order the pizza eat one or two slices and freeze the rest for another day” but I don’t live in Brooklyn anymore and the pizza here just doesn’t compare! So in an act of creativity and desperation, I bought some vodka sauce and decided to make a healthy, protein packed, skinny, almost pizza. It turned out delicious and guilt free! Just enough to get that fix, try it out!

SKINNY VODKA PIZZA

whisk 3 eggs or egg whites together and pour into a pam sprayed pan on your stove top (just like making an omelette). After you flip it and your pancake like omelette is almost done, spread some vodka sauce all over at your discretion and sprinkle it with your favorite low fat or fat free shredded cheese. Cook till the cheese is sufficently melted and enjoy! Your own mini protein pizza, guilt free and satisfying!

Yesterday, I had an amazing morning running the Damon Runyon 5K for Cancer at Yankee Stadium. My friend Julie and I raised money for cancer research and got to enjoy the exhilarating 5K course around Yankee Stadium, including two laps on the actual warming track right on the field. I had a blast and boy was I a ball of sweat when we finished! It felt great! However as soon as I got home (and after I jumped in a shower) I decided to whip up a protein shake for myself to hold me over till my early dinner plans. The random, absentmindedly made concoction came out so yummy I had to share!

THE PINK DRINK 

one packet of vegan vanilla protein powder (bought at Whole Foods)

1 cup of vanilla almond milk (but you can use coconut milk, rice or soy!)

1/2 cup or so of ripe organic strawberries

1/2 a tray of organic ice cubes

Blend away!! Also, feel free to add some Truvia or agave in there if you want it to taste more like a strawberry milkshake. 😉

Today after returning from a much needed gym session I was far too hot and sweaty to cook or to consume anything hot whatsoever, and there in my nearly delirious mind pops the idea of cold oatmeal. A couple years back when I worked at an office down by Wall street, I had found cold oatmeal at the local coffee shop and found it extremely odd. In fact, I was pretty turned off by it, to be honest. However, one day when I was aching for some soy milk oatmeal with strawberries and bananas (they did it up, goooood!), they were all out of the hot variety and I was offered the refrigerated version. In desperation I succumbed to the bizarre treat and there a love affair was born. Now to my surprise, it had never actually occurred to me to make this at home till this very morning. So I grabbed a coffee cup, added the usual ingredients and let it sit in the fridge for 10 minutes or so while I checked my email and it ended up being the best summer breakfast I’ve made to date. I’ll now probably be eating it for the next month till I get sick of it because I’m that obsessed! Okay, enough about how much I love it, here’s the quick and easy recipe, try it for yourself! Thank me later. 😉

REFRIGERATOR OATMEAL

1/2 cup quick oats
1 cup vanilla almond milk (but you can use whatever milk your partial to)
a few shakes of pumpkin pie spice (or cinnamon)
1/2 a banana chopped up

Mix it all together, put some plastic wrap or a cover over it so it doesn’t get any of your fridges’ smells and leave it for 10 minutes or so. Enjoy!

P.S. This photo is actually taken at my bedside table, and yes I do have battery operated candles cause I tend to fall asleep while reading. True story. Now you’ve seen my bedroom, things are getting a little more serious.

I found this fantastic recipe for strawberry banana muffins on Peta.org! They have a ton of great vegan recipes that you can give your own spin to when you make ’em at home! Strawberry-Banana has got to be my favorite flavor combination so I could not resist these little babies!

 

Strawberry Banana Muffins

3/4 cup light brown sugar

Egg replacer equivalent of 2 eggs

1 tsp. vanilla extract

3 ripe bananas, mashed

1/2 cup melted margarine

2 1/4 cups of flour

1 1/2 tsp. baking powder

1/4 tsp. baking soda

1 tsp. cinnamon

pinch of salt

1 cup chopped strawberries

Preheat your oven to 350 degrees and line your muffin pan with liners. In a bowl, whisk together your brown sugar, egg substitute, vanilla, and bananas. Next, add your margarine. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Now gently, fold the berries into the flour mixture. Add your first bowl in, and stir until just combined. Fill the cups just a little more than half way and bake for about 20 minutes! Enjoy! These are a lovely breakfast treat with some tea or soy milk!
