Vegan Gluten Free ‘Nutella’ Cookies
Hey loves! I teamed up with Thrive Market to share with you some of my favorite gluten free recipes and these chocolate chip cookies certainly top the list! I loving call these healthy nutella cookies because I made them with both chocolate chips and slivers of hazelnut – two of the main flavors in the beloved nutella spread. However, these delicious cookies are actually vegan (dairy free), sugar free AND gluten free, which make them pretty darn magical on the spectrum of sweet treats! Gluten-Free Chocolate Chip Hazelnut Heaven Cookies
Yield: 18 to 24 cookies
Active Time: 15 minutes
Total Time: 25 minutes
Ingredients
1 ½ cups gluten-free oat bran
½ cup hazelnuts, chopped
½ cup vegan chocolate chips
2 tablespoon of cashew butter
2 tablespoon of flax oil or coconut oil
2 teaspoons vanilla extract
1 teaspoon of cinnamon
2 flax “eggs”
1 large ripe banana
For one “flax egg”
1 tablespoon flaxseed meal
3 tablespoons water
Instructions
Preheat oven to 375 degrees and line a baking sheet with parchment paper.
Combine all ingredients together into a large bowl, mixing thoroughly until batter thickens and is completely moistened. Place 1 1/2-inch balls of batter 1 inch apart on baking sheet and lightly press down on each with your palm.
Bake 7 to 10 minutes, until golden on the outside edges. Allow to cool, then enjoy with a glass of almond milk.

You can use this meditation any time you are ready for a fresh start. Gluten Free Oatmeal Cakes with Thrive Market
I had a blast sharing some of my favorite gluten free and vegan recipes with Thrive Market recently. These gluten free strawberry banana oatmeal cakes are a great easy vegan recipe to make on Sunday night and have for breakfast all week long. They also make a delicious addition to your weekend brunch, just place them in a bowl with some steamed nut milk and chopped strawberries for a complete upgrade from your average oatmeal!
Strawberry Gluten-Free Baked Oatmeal Cakes
Yield: 6 to 8 servings
Active Time: 15 minutes
Total Time: 25 minutes
Ingredients
3 cups gluten-free oats
1 tablespoon baking powder
1/2 teaspoon sea salt
2 teaspoon cinnamon
2 “flax eggs” (see below)
¼ cup maple syrup
2 teaspoons vanilla extract
½ cup unsweetened applesauce
2 bananas, ripe
½ cup chopped strawberries
For one “flax egg”
1 tablespoon flaxseed meal
3 tablespoons water
Instructions
Preheat oven to 375 degrees.
Make the flax eggs
In small bowl, mix together flaxseed meal and water until combined. Let sit for 5 minutes to come together.
Make the muffins
In medium bowl, stir together dry ingredients. Add wet ingredients and stir until just combined. Distribute batter evenly into muffin tin cups and bake for 10 minutes, or until set.
Serve with almond milk, nuts, fresh fruit, and/or nut butter.
How to Overcome PERFECTIONISM
Wow-ee! I just finished the first draft and sent it all in of my first book baby, “Eat with Intention”, which will be a lifestyle guide full of food, meditation and self-care recipes to help you make peace with your body so that you can listen to it’s inner wisdom! The whole book writing experience has been such an epic journey for me. It’s brought up A LOT of “stuff” I didn’t even realize I had running around in my head. One of the most surprising being perfectionism, something I was sure I was immune to.

Knowing When To RISE // Well + Food fest recap
In this video, I discuss the difference between having the call to RISE and step up to a new level of responsibility and expansiveness in your life and knowing when you need to take some things off your plate. I also re-cap the wonderful well + food fest event I did in NYC with chef Daphne Cheng and the importance of melding the wellness and foodie worlds.
Below are some glimpses of the amazing night that I’m so happy I said “yes!” to. Daphne Cheng and I collaborated on a fun, haute, plant-based menu and the event marked the grand opening of her gorgeous new event space in the Lower East Side of Manhattan, Exhibit C. Our intention was to create an evening that celebrated good food, incredible people and the merger of both the fun and the functional side of taking care of yourself and what you put into your body.
I began the evening with a short talk about how it came about and then guided guests in a meditation to get that back in touch with their bodies, releasing any stress or tension they may have been carrying from the week before and centering them in the present and their intention for the food they were about to eat and their whole experience of the evening.
The menu went over very well, but my far away favorite was this truffled cauliflower soup with roasted apples, fresh herbs and wild mushrooms. The entire menu was seasonal and based on Daphne’s farmer market finds as well as both of our personal tastes of the fall.
This was the first event that I both cooked for, hosted and spoke at! My heart was pumping like mad all night but I couldn’t have felt more aligned, full of joy and immensely grateful to be able to share so much of myself and my gifts with everyone who attended. I really sat in this beautiful space of grace while watching the night unfold exactly as it needed to – hiccups and all!
Daphne is the only person I’ve ever collaborated with on this level of menu creation, food prep and event execution and it was such a beautiful melding of both of our passions. I could not have imagined a more cohesive or loving partnership. I feel beyond blessed to have had our paths cross and I’m so excited for what the future will bring for the both of us and more events like this!
Of course, how I could I forget the incredible goodie bags and supportive sponsors we had for the night!
