Vegan Chocolate Cupcakes with Healthy Chocolate Frosting
I made my FAVORITE gluten free, vegan chocolate cupcakes with my healthy chocolate icing recently for Thrive Market. This recipe not only uses date sugar to sweeten the cupcakes as naturally as possible with REAL food but the icing is also primarily made from sweet potatoes. Gluten-Free Vegan Chocolate Cupcakes
Ingredients
For the cupcakes
2 cups chocolate almond milk
2 teaspoons apple cider vinegar
2 cups quinoa flour
3/4 cup unsweetened cocoa powder
1/2 cup date sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon pumpkin pie spice
1/2 cup unsweetened applesauce
1/2 cup maple syrup
1 tablespoon vanilla extract
1 teaspoon almond extract
1/2 cup coconut oil
For the frosting
4 ounces unsweetened chocolate, chopped
1/4 cup cashew butter
2 tablespoons coconut oil
1/2 cup sweet potato puree
1/4 cup carob or cacao powder
3 tablespoons date sugar
Pinch of salt
10 to 15 drops vanilla stevia
Unsweetened shredded coconut, for garnish
Instructions
Make the cupcakes
Preheat oven to 375. Combine apple cider vinegar and chocolate almond milk and set aside to curdle.
Using a stand mixer or a large bowl and hand mixer, add together dry ingredients until just combined. Add wet ingredients into the bowl, and mix together until batter comes together. Grease a muffin tin with coconut oil, and fill tins halfway with batter. Bake in the oven for 12 to 15 minutes or until firm.
Make the frosting
In a small saucepan over low heat, simmer chocolate, cashew butter, and coconut oil, stirring constantly. When chocolate begins to melt, remove from heat. In a small bowl, combine cacao powder, date sugar, stevia, salt, and sweet potato puree. Carefully pour chocolate mixture into the sweet potato mixture, and stir together until combined. Refrigerate until cool, stir again.
Frost the cupcakes
Using a piping bag or plastic sandwich bag with a corner cut off, pipe frosting onto cupcakes in swirls. Top with a sprinkle of shredded coconut.

EASY VEGAN SUMMER ROLLS
Summer is right around the corner and I have been obsessed with the mouth watering photos of veggie spring rolls all over instagram and pinterest. Luckily my friend Nicole is a veggie summer roll maven and offered to come over and share her favorite, easy vegan spring roll recipe with me and I wanted to let you all in on the fun. These veggie rolls with thai peanut dipping sauce were out of this world and SO easy to make. It’s going to be your favorite go-to summer recipe!

VEGAN SPRING ROLLS
– 10-12 rice papers
– 2 cups mixed greens or lettuce of your choice
– I large carrot, shredded
– 2-3 scallions, shredded
– 1 avocado
– 1/2 cup water chestnuts
– warm water
Soak one rice paper at a time in warm water until softened (about one minute) Transfer to a smooth surface and add lettuce, carrots, scallions, water chestnuts, and avocado.
To roll, tuck the sides in first, then the bottom of the rice paper, and finally the top. Roll into a burrito shape and continue with remaining rice papers.
Refrigerate for 30 minutes to an hour, cut in half with a sharp knife, and serve with peanut sauce.
Peanut Sauce Recipe
1/2 cup peanutbutter
1/4 cup water
2 tbsp rice vinegar
3 tbsp soy sauce (low sodium)
1 tbsp agave
1/2 tsp ground ginger
1 tsp garlic powder
1 lime/ or 2 tbsp lime juice
Combine all ingredients in a bowl or high powdered blender. Blend or whisk until smooth.

Vegan Gluten Free ‘Nutella’ Cookies
Hey loves! I teamed up with Thrive Market to share with you some of my favorite gluten free recipes and these chocolate chip cookies certainly top the list! I loving call these healthy nutella cookies because I made them with both chocolate chips and slivers of hazelnut – two of the main flavors in the beloved nutella spread. However, these delicious cookies are actually vegan (dairy free), sugar free AND gluten free, which make them pretty darn magical on the spectrum of sweet treats! Gluten-Free Chocolate Chip Hazelnut Heaven Cookies
Yield: 18 to 24 cookies
Active Time: 15 minutes
Total Time: 25 minutes
Ingredients
1 ½ cups gluten-free oat bran
½ cup hazelnuts, chopped
½ cup vegan chocolate chips
2 tablespoon of cashew butter
2 tablespoon of flax oil or coconut oil
2 teaspoons vanilla extract
1 teaspoon of cinnamon
2 flax “eggs”
1 large ripe banana
For one “flax egg”
1 tablespoon flaxseed meal
3 tablespoons water
Instructions
Preheat oven to 375 degrees and line a baking sheet with parchment paper.
Combine all ingredients together into a large bowl, mixing thoroughly until batter thickens and is completely moistened. Place 1 1/2-inch balls of batter 1 inch apart on baking sheet and lightly press down on each with your palm.
Bake 7 to 10 minutes, until golden on the outside edges. Allow to cool, then enjoy with a glass of almond milk.

Gluten Free Oatmeal Cakes with Thrive Market
I had a blast sharing some of my favorite gluten free and vegan recipes with Thrive Market recently. These gluten free strawberry banana oatmeal cakes are a great easy vegan recipe to make on Sunday night and have for breakfast all week long. They also make a delicious addition to your weekend brunch, just place them in a bowl with some steamed nut milk and chopped strawberries for a complete upgrade from your average oatmeal!
Strawberry Gluten-Free Baked Oatmeal Cakes
Yield: 6 to 8 servings
Active Time: 15 minutes
Total Time: 25 minutes
Ingredients
3 cups gluten-free oats
1 tablespoon baking powder
1/2 teaspoon sea salt
2 teaspoon cinnamon
2 “flax eggs” (see below)
¼ cup maple syrup
2 teaspoons vanilla extract
½ cup unsweetened applesauce
2 bananas, ripe
½ cup chopped strawberries
For one “flax egg”
1 tablespoon flaxseed meal
3 tablespoons water
Instructions
Preheat oven to 375 degrees.
Make the flax eggs
In small bowl, mix together flaxseed meal and water until combined. Let sit for 5 minutes to come together.
Make the muffins
In medium bowl, stir together dry ingredients. Add wet ingredients and stir until just combined. Distribute batter evenly into muffin tin cups and bake for 10 minutes, or until set.
Serve with almond milk, nuts, fresh fruit, and/or nut butter.
How to Overcome PERFECTIONISM
Wow-ee! Joshua Tree Vision Quest
This past weekend I had the incredible pleasure of heading out to the desert with an incredible group of women for a kundalini yoga retreat with my teacher, Guru Jagat. The weekend was titled, “Immense Grace Vision Quest: Desert Activation” and not only did we do tons of yoga, meditation and ceremonies but we also embarked on a mini ayurvedic cleanse and learned about cooking for different doshas. The women that came together were everywhere from famous recording artists to functional medicine doctors, to householders and mothers, hair stylists, actresses, you name it. We all joined together for strength, clarity and grace. We were all ready for a next level of being and I think we all went home with more than we bargained for.
Many things came up for me over the weekend but the few that I want to highlight for you are the big take-aways that me and the incredible woman who embarked on the retreat with me really grounded ourselves in after the four days.
First, have more fun! Joy raises our vibration, it connects us with our higher self and is the super highway to true realization. On the ride up, five of us were crammed into a car for hours sitting in traffic and having the best time singing everything from the Beatles to Biggie. At one moment, I literally caught myself buzzing out of such pure joyfulness. No agenda, just pure silliness, complete release. These little treasure chests of joy and bliss are all over our lives and we simply have to be more conscious of opening up the chest and allowing ourself to receive the gold inside. I knew the lesson in that moment was to conscious incorporate more moments of fun in my life, to seek out those treasure chests of bliss on a daily basis.
Later on in the weekend the entire group of us women sat in a circle and shared what we were working on in our life right now or how we had first come to kundalini yoga and it was one of the most divine experiences. We each saw every other woman in a very different, vulnerable light. Collectively we realized that we were all there for the same thing – to love ourselves and accept ourself deeper. Some of us were millionaires and others living with their parents trying to get back on their feet, some were married with babies, other’s single, young, old, but we all came for the same medicine. Anything that we could have thought we wanted was reflected to us by another woman in the circle, she had the baby or the career or the husband, but it still wasn’t enough, it would never be enough until we all had a deeper experience of the truth of who we really are.
The words that repeatedly came to me through the weekend were: discipline, devotion, conviction, and grace.
DISCIPLINE: relying on our strong daily practice and alkalizing foods to set the foundation for us to have the highest experience of ourselves every day.
DEVOTION: the deep rooted self-love that fuels your disciplined rituals.
CONVICTION: the clarity of mind and intention around what we are here to do and who we truly are. Standing in our truth unapologetically and not letting any outside circumstances dim or light or push us into playing small.
GRACE: simple elegance in the way we navigate our lives.
As part of all these beautiful discoveries and remembrances, I heard loud and clear that it was time to unleash another round of the LightMaker Lifestyle Mentorship. It was through the deep devotion and clarity I have around what I’m here to teach and who I’m here to guide that I realized it was not yet time to close shop on this intimate one on one intensive experience. I have known for a while but it became even more crystal clear this past weekend, I’m meant to teach woman how to create a strong foundation using the technologies of food, meditation and self-care to live out their biggest, most fulfilling lives. This mentorship is not just about being your coach for a few months, it’s about elevating your level of being so that you are an untethered force of light in the world and can go brightly shine on your own community. Another massive and aligned project came to the surface for greater clarity as well but you will have to wait a couple months for me to unveil that.
In summary, you don’t have to go on an amazing desert retreat to receive any of these insights but you DO have to allocate some time for yourself away from your computer, your phone and any other regular distractions so you can become still, quiet and go deep within to hear what your soul is trying to tell you.
